Quinoa + Bell Peppers
Let’s talk about healthy snack food
Quinoa is my favorite snack or a great addition to my eggs in the morning.
Next time you think about letting the extra chopped-up bell peppers and onions go to waste in your refrigerator, DON’T. It will make whatever your next meal is 10x better.
Now, let me confess I don’t cook my own quinoa, but if you want to be great, go ahead! I get this great Mediterranean mix that you can find at your local Walmart and I’ve even seen other brands in Target and Kroger. Just look for it in your frozen foods aisle.
how did you start eating quinoa?
A few years ago I realized I was having a lot of digestive issues and needed to adjust my diet before I developed a leaky gut. So, instead of making matters worse, I listened to my body and switch to a 70% vegetarian diet and ate lean meats like fish, chicken, and ground turkey when I needed protein. I found really great Mediterranean cookbooks here.
Add your chopped-up onions and bell peppers, maybe even some chopped-up spinach. Put it next to your eggs in the morning for a great breakfast or eat it solo for lunch. Either way, your body will thank you.
